Zucchini Mozza Bake



1 cup passata

2 tbsp olive oil

2 garlic cloves

2 tbsp chopped basil

3/4 tsp salt

1/4 tsp pepper


1 large tomato sliced

2 zucchini's, sliced (I use one green, one yellow)

125g fresh mozzarella, sliced

1 tbsp olive oil

salt and pepper


1. Add all the sauce ingredients into a food processor and puree until smooth. Transfer sauce to a pie dish and spread evenly on the bottom.

2. Layer in a circle along the outer side of the pie dish, 2 zucchini slices, 1 tomato, and 1 mozza slice, continue in that order until you go all the way around. Then do so again in the middle, until you fill the dish. Drizzle the 1 tbsp olive oil on top and season with salt and pepper.

3. Bake at 400 degrees for 30 minutes, until cheese is melted and sauce is bubbling. Enjoy! .
