Veggie Fritters



Ingredients:

1/2 cup canola oil, plus 1 tbsp

1/2 sweet onion, chopped

1¾ cup grated zucchini

1¾ cup grated carrot

⅔ cup panko crumbs

2 large eggs

1 tsp garlic powder

¾ tsp salt

1/4 tsp pepper

sour cream for serving

cilantro or green onion for garnish


Instructions:

1. In a deep pan heat 1 tbsp of the oil over medium heat. Add onion and sauté until soft. Transfer onion to a large bowl. Mix in the zucchini, carrot, panko, eggs, garlic powder, salt and pepper, until combined.


2. In the same pan from the onion heat the remaining canola oil over medium low heat. With the veggies mixture form patties about 3 inch round and 1/4 inch thick. While forming, squish out some of the water from them to help hold their shape. Add patties to the hot oil and fry each side for about 2 minutes or until golden brown. Serve fritters with sour cream and any desired garnish.
