Spinach and Artichoke Dip


1 tbsp olive oil

1/2 cup chopped onion

3.5oz fresh baby spinach, chopped

1/4 cup canned and drained artichoke hearts, chopped

150g cream cheese

1/2 cup sour cream

3/4 cup Italiano blend shredded cheese

1 tsp garlic powder

1/2 tsp hot sauce (if you want a kick)

salt and pepper to taste


1. Over medium heat in a pan heat olive oil then add onion. Sauté until soft. Add the spinach and sauté until wilted, about 1 minute. Transfer mixture to a bowl and let cool 5 minutes.

2. Add the artichokes, cream cheese, sour cream, 1/4 cup of the shredded cheese, garlic powder, hot sauce, and salt and pepper to the bowl. Mix until combined. Transfer to a baking dish and top with remaining cheese.

3. Bake at 375 for 25 minutes, or until the dip is bubbling and cheese is melted. Enjoy!
