Penne Alla Vodka


2 tbsp butter

5 sweet Italian sausages (or honey garlic)

1/2 sweet onion, chopped

3 garlic cloves, minced

3/4 cup vodka

2 1/4 cup passata

1 tbsp oregano

1 tbsp basil

1 tbsp smoked paprika

1 cup whipping cream


OPTIONAL: fresh basil and parmesan for serving


1. Melt butter in a saucepan over medium heat. Squish the sausages out of the casing and into the pan. Break down with a spoon while cooking until no longer pink. Add onion and sauté until soft, then add garlic for 30 seconds more.

2. Pour in the vodka, lower heat to medium low, and simmer until vodka has reduced about half. Then stir in the passata, oregano, basil, and smoked paprika. Simmer 10-15 minutes more.

3. Meanwhile cook your pasta according to package directions. Then pour in the whipping cream to the sauce, simmer 4 minutes more and season with salt and pepper.

4. Enjoy sauce over pasta and garnish with fresh basil and parmesan if desired.
