Mint Chocolate Chip Cookies



Prep Time: 10 Minutes

Cook Time: 20 Minutes

Serves: approx 20 cookies


Ingredients:

½ cup unsalted butter, room temperature

¾ cup sugar

1 egg

1 tsp peppermint extract

3-4 drops green food colouring (optional)

1½ cups flour

½ tsp baking soda

1 tbsp baking powder

¼ tsp salt

1 cup semi sweet chocolate chips


Instructions:

  1. Preheat oven to 350 degrees. In a mixer cream together the butter and sugar on med low speed. Add the egg, peppermint extract, and food colouring and mix again until combined.

  2. In a medium bowl, mix with a spoon the flour, baking soda, baking powder, and salt.

  3. Set the mixer on low speed and slowly add the dry ingredients into the wet. Mix just until combined. Then stir in the chocolate chips into the dough with a spoon.

  4. Prepare a cookie sheet by lining it with parchment paper. Roll dough into 1 1/2 inch balls and lay on sheet 3 inch apart. Bake for approx 8 minutes, or until just starting to show some browning on the top. Cool cookies on a cooling tray. Enjoy!
