Serves: 5-6 pancakes
Ingredients:
1¼ cup packed fresh spinach
1 cup milk
1 large egg
1 tbsp canola or coconut oil
1 cup flour
1 tbsp sugar
1 tsp baking powder
½ tsp baking soda
½ tsp kosher salt
Instructions:
In a blender add the spinach, milk, egg, and oil, and puree until smooth.
In a large bowl, mix the dry ingredients, the flour, sugar, baking powder, baking soda, and salt. Add the wet ingredients to the dry ingredients and whisk together.
Use batter as normal to make pancakes. Using a sprayed/buttered/or oiled pan on medium heat, add a ladle full of the batter at a time. Allow to cook until pancake starts to bubble about 2 minutes, then flip. Again cook about 2 minutes more. Continue until all batter is used. Enjoy!
