Lemon Poppy Seed Loaf


2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

3/4 cup unsalted butter

1 cup sugar

3 eggs

Zest of 2 lemons

Juice of 2 lemons

3/4 cup milk

1 tbsp vanilla

2 tbsp poppy seeds


1 cup icing sugar

2 tbsp lemon juice

1 tbsp milk


1. Sift the flour, baking soda, baking powder, and salt. Set aside.

2. In your mixer on low, mix the butter and sugar until light and fluffy. Add the eggs and stir. Then the milk, lemon zest, lemon juice, and vanilla just until combined. Add half the flour mixture, then the other half just until combined. Stir in the poppy seeds.

3. Pour into loaf pan lined with parchment. Bake at 350 for 45-50 min. Cool.

4. Whisk the glaze ingredients together then pour over loaf.
