Halloumi Caprese Salad


1 pint of grape or cherry tomatoes, halved

2 tbsp of fresh basil, finely chopped

3 tbsp olive oil

1/4 tsp salt (or more to taste)

1/4 tsp pepper

1/4 tsp garlic seasoning

200g halloumi cheese cut into 1/4 inch slices

Balsamic Vinegar of Modena Glaze to taste


  1. In a medium bowl mix together the tomatoes, basil, olive oil, salt, pepper, and garlic seasoning, set aside.

  2. Preheat your bbq at a medium-high heat. Place halloumi cheese on grill about 3 minutes per side, or until nicely browned grill marks appear. Remove from grill and set on a serving tray.

  3. Top the cheese with the tomato mixture. Drizzle over the balsamic glaze, approx. 3 tbsp. Enjoy!
