Garlic Shrimp Pasta


400 g large raw shrimp, peeled, and thawed

salt and pepper

6 tbsp butter

1 shallot, chopped

3 garlic cloves, minced

1 cup dry white wine

1 cup whipping cream

300 g linguine pasta

2 tbsp chopped chives

parmesan for serving


1. In a bowl toss raw shrimp with salt and pepper.

2. In a deep pan over medium heat melt 2 tbsp of the butter. Fry the shrimp until they turn orange and are starting to brown slightly. Transfer to a bowl and set aside.

3. Using the same pan melt the remaining butter. Add the shallots and sauté about 1-2 minutes, add the garlic, sauté 30 seconds more. Pour in the wine and simmer until reduced by half about 3 minutes. Add the whipping cream and simmer together about 3 minutes more. Add the shrimp back in the sauce.

4. Meanwhile cook pasta according to package directions. Toss with sauce and season with salt and pepper. Top with fresh chives, and serve with parmesan.
