Chocolate Coconut Granola Bars


1 1/2 cup instant oats

1 cup Rice Krispies cereal

1 cup shredded unsweetened coconut, plus 1 tbsp more

3/4 cup sunflower seeds

1/2 cup brown sugar

1/2 cup honey

1/2 cup butter, unsalted

1 cup semi-sweet chocolate chips

1 tbsp chia seeds


  1. In a large bowl mix together the oats, Rice Krispies, 1 cup shredded coconut, and sunflower seeds.

  2. In a large pot over medium heat melt the sugar, honey, and butter together until liquid. Remove from heat and stir in the dry mixture. Transfer to an 8x8 casserole dish lined with parchment paper, flattening the top. Refrigerate for 2 hours.

  3. Once cooled, cut into granola bar sized pieces, keeping them on parchment paper. Microwave chocolate chips until completely melted, stirring ever 15 seconds, for a total of about 1-1min, 30 seconds. Drizzle over granola bars. Then top with additional coconut and chia seeds. Keep refrigerated to store until you want to enjoy!
