Chewy Ginger Cookies



Ingredients:

3/4 cup softened butter

1 cup sugar, plus more

1 egg

1/4 cup molasses

2 1/4 cup flour

1 tsp baking soda

2 tsp ground ginger

3/4 tsp cinnamon

1/2 tsp cloves

1/4 tsp salt


Instructions:

1. In a mixing bowl on low speed cream butter and 1 cup sugar until fluffy. Then add egg and molasses and mix 30 seconds more.


2. In a separate bowl mix the flour, baking soda, ginger, cinnamon, cloves, and salt.


3. With a spoon mix the dry ingredients into the butter mixture, just until incorporated.


4. Make 1 1/2 inch balls with the dough, rolling each one completely in sugar then placing on a baking sheet. Bake cookies at 350 degrees for 10-12 minutes or until they crackle
