Cheddar and Chive Biscuits



Ingredients:

2 cups flour

4 ½ teaspoons baking powder

1 teaspoon salt

6 tablespoons cold unsalted butter, cut into cubes

1 cup sharp cheddar cheese, shredded

2 tablespoon chopped fresh chives (stem and or blossoms)

3/4 cup buttermilk

2 tablespoons melted butter, for brushing


Instructions:

  1. Preheat oven to 425 degrees. In a large bowl, stir together flour, baking powder and salt until evenly distributed. Sprinkle over butter cubes, then use a pastry cutter or two knives to break up the butter into pea-sized pieces. Then stir in the cheddar and chives.

  2. Pour in the buttermilk and stir with a fork until evenly moistened. Press dough together into a loose ball with your hands then transfer to a lightly floured surface. (if you're dough isn't coming together, add a tbsp at a time of buttermilk until it does)

  3. Using your hands bring the dough together and flatten into a disk about 1/2 inch thick. Use a round cookie cutter (approx 2 inch) to cut circle shapes and place them on a baking sheet lined with parchment paper. Continue to bring your dough together and cut round pieces until all your dough is used.

  4. Bake biscuits for 12-15 minutes (this will depend how large your cutter was) or until biscuits are golden brown. Brush with the melted butter soon as they are removed from the oven. Enjoy!
