Broccoli and Cheddar Soup


4 tbsp butter

1 small onion, diced

4 garlic cloves, cut into thirds

6 cups chicken or vegetable stock

7 cups chopped broccoli

1 1/2 cups matchstick carrots

1 cup heavy cream

2 1/2 cups shredded cheddar cheese, plus more for serving

salt and pepper to taste


1. In a large soup pot melt butter over medium low heat. Add the onion and sauté until soft, then add the garlic and continue to sauté 1 minute more.

2. Pour in stock and bring to a boil. Add the carrots and broccoli and simmer until veggies are soft. Remove from heat. In batches puree the soup in your blender until smooth, then bring it all back to the pot.

3. Mix in the cream and cheddar and bring to a simmer over medium low heat. Simmer an additional 5 minutes. Season with salt and pepper to taste. Serve with additional cheddar.
