30 Minute Tomato Soup

Cook Time: 25 Minutes

Prep Time: 5 Minutes

Serves: approx 5 ppl


1/4 cup butter

1 1/4 cup chopped sweet onion

4 cups vegetable stock

1 tbsp dried basil

2 tbsp sugar

800ml can San Marzano tomatoes

4 garlic cloves

3/4 cup heavy creamy

salt and pepper to taste


  1. In a large soup pot over medium heat, add the butter and stir until melted. Add the onions and sauté just until softened and starting to lightly brown.

  2. Pour in the stock and add the basil. Bring to a boil. Once stock is boiling stir in the sugar, tomatoes, and toss in the garlic. Simmer on medium low for 10 minutes.

  3. Transfer the soup to a blender (or use a hand blender) and puree until smooth. Bring soup back to the pot over medium low heat.

  4. Stir in the cream and season with salt and pepper. Simmer for an additional 2-5 minutes. Enjoy!
