2 cups softened unsalted butter
3/4 cup fruit sugar
1/4 tsp salt
3/4 cup rice flour
4 cups pastry flour
In a mixer on low speed cream butter. Add the fruit sugar and salt and mix again until combined. Then mix in the rice flour, followed by the pastry flour (adding the flour slowly as it mixes).
Spread a piece of Saran wrap on your counter. Shape dough into a log then wrap with saran. Refrigerate for 45 minutes.
Cut dough into 1/4 inch slices and place on baking sheet lined with parchment paper. Bake at 275 degrees for 30 minutes. Cool and enjoy!
